Iconic then, Iconic now: Fairmont Le Manoir Richelieu ­celebrates its 125th anniversary.

In 125 years, Fairmont Le Manoir Richelieu has borne witness to countless sunrises, numerous tidal changes, iconic evening attires, endless games of skill and receptions . . .
If its stone walls could talk, the building would whisper tales filled with grandiose moments, historical moments. For 125 years, Le Manoir has been the backdrop for weddings, first encounters, diplomatic visits, children’s games, winter sports, diving excursions and Sunday brunches… Fairmont le Manoir Richelieu has a place in the fond memories of families everywhere, past and present. In the past, vacationers who were avant-garde enough to own a camera would capture their summer in Murray Bay. Nowadays, anyone can snap a selfie and share it instantly. The fact remains that from one era to the next, we see in these copper gables, greened by the passage of time, a symbol, an icon. A nod to the timeless art of living, a meeting place for those who want to escape, to go where the air is fresh and the fun is plenty.
Steam locomotives have given way to the iconic yellow Train de Charlevoix. International flights are now preferred to white boats, and horse-drawn carriages have deserted the stables and have been replaced by automobiles. Yet, people continue to flock to Fairmont Le Manoir Richelieu. From 1899 to today, the aura of relaxation and entertainment of the «Le Manoir» remains intact, within the Hôtel-Casino de Charlevoix entertainment complex.

A food philosophy focused on the product, its proximity, its seasonality... This is the approach adopted by the kitchens of Fairmont Le Manoir Richelieu when it comes time to put down, on paper as well as on the plate, the flavours of the moment. The menu features dishes with straightforward names such as «mushrooms,» «apples» or «honey,» reflecting a real respect for local ingredients and the work of Charlevoix producers. In compliance with rigorous environmental programs—Orbisk for waste management and Klimato for carbon footprint reduction—the kitchen brigade creates dishes with precision and harmony. Honouring the product, reducing sauces, flavouring the oils, creating an exquisite crust with a culinary torch, adding the perfect finishing touch, a dash of fresh herbs here, a sprinkling of seasoning there, the art of creating a flawless fusion of flavours... if the ingredients are key, so is the team!
