He carries a significant portion of Charlevoix’s food independence on his shoulders, this man who, for many, has become the face (and ­especially the name) that guarantees the ­quality of the fruit and vegetables that fill our ­baskets on market days, that, more and more each year, fill our dining room tables at home. “This is ­Guillaume’s bok choy,” your server will tell you when you visit the area’s best restaurants. With his desire to offer the widest variety of the best food with no compromises, harvested at just the right times where the journey from farm to table is a short one, and exclusive of the nonsense found in today’s big grocery chains, Guillaume has ­carved plenty of room for himself on the plates of those who make their homes in Charlevoix.
