From farm to table, from the barnyard to the shop ­window: Gabrielle Cadieux-Gagnon and her family make Les Éboulements the epicentre of the “eating local” concept.

Ferme Éboulmontaise

Knowledge was passed down from mother to daughter on this family farm where the agneau de Charlevoix [Charlevoix lamb] designation evolved in the 1990s. Today, Gabrielle, her husband, and their three curly blonde-haired kids have diversified their livestock: to pasture-raised lamb, they’ve added poultry, rabbits, and crossbred Berkshire, Duroc, and Nagano pigs, as well as boar. Here, a return to short-journey food is advocated as an ideology: Butchery is done on-site, processing is done in the kitchen, and products can be purchased in an attractive boutique that doubles as a dinette. There, you’ll find comforting lamb-broth ramen bowls, perfect after a stroll with your pooch on the trail that meanders through the farmland!
